Food and Care Coalition

Prosper has teamed up with the Food and Care Coalition to provide much needed items to Utah families for the Holiday Season. The following four sections detail what is needed and provide contact information for these items.

Sack Lunch Requirements

Other items can enhance lunches (optional)
Health guidelines:
  • Tie back medium & long hair
  • Wash hands
  • Don’t prepare foods if you are ill
  • Use disposable vinyl gloves if hands have a cut or scratch on hand
  • Use fresh food, wash veggies & fruits
  • Keep cold foods cold -use ice chest in warm weather to transport lunches, refrigerate overnight if prepared ahead of time. 


Casseroles Needed
Call Treva Christiansen at 8 01-373-1825 to schedule.

  • Delivery: Enter from 900 S & drive to East entrance, ring bell.
  • Call ahead to schedule donation
  • Bring in disposable pan -appx. 10" X 12"
  • Uncooked and freezable, covered
  • 10 to 12 casseroles provide an entire meal
  • (Main dish casseroles)
  • Suggested types: Lasagna, Shepherd'sPie, Tuna &
Noodle, Potato & Ham, Cheesy Potato, Macaroni &
Cheese, Spaghetti with meat, Rice & meat, veggies
with sauce, Enchilada and other Mexican styles, etc.

Health Guidelines:
1. Use fresh food
2. Tie back long hair and wash hands
3. Use vinyl gloves if hands have a break in the skin.
4. Don't prepare food if you are ill.
5. Keep cold foods cold - refrigerate if prepared ahead.



Chili Egg Puff
(serves 8-10 people)

Ingredients:
10 eggs
1/2 cup flour
1 tsp. baking powder
1/2 tsp. salt
1 4-oz. can diced green chilies (mild)
2 cups small-curd cottage cheese
4 cups shredded jack cheese (or mixed cheeses)

Directions for you:
Beat eggs together. In a separate bowl, combine dry ingredients, then slowly add dry mixture to the eggs. Add all other ingredients except chilies and mix well. Stir in chilies. Pour into greased 10”x12” disposable aluminum pan.

Baking Instructions:
(don’t do this part -- this is what the Food and Care Coalition will do.) Bake at 350ºF for 35 mins (until bubbling and brown on top). If you are doubling the recipe, the cooking time may increase.

Finals Casserole
Ingredients:
8 slices of bread, crusts removed, cut in 1-inch cubes
2 cups grated cheese
1 1/2 pounds link sausage, fried, drained, and cut in bite-sized pieces
(you can substitute with ham, bacon, or other sausage)
4 eggs
2 1/2 cups milk
3/4 tsp. dry mustard
1 tps. salt
1 can cream of mushroom soup
1/2 cup more of milk (to dilute can of soup)
Optional: mushrooms, green peppers, pimentos

Directions for you:
Layer bread cubes in bottom of buttered 10”x12” disposable aluminum pan. Top with sausage, then sprinkle cheese over. Beat eggs
with milk, salt, and dry mustard and pour mixture over ingredients in the pan.  REFRIGERATE OVERNIGHT. In the morning, dilute soup with the extra 1/2 cup of milk and stir until soup mixture is smooth. Pour over casserole in pan.

Baking Instructions:
(don’t do this part -- this is what the Food and Care Coalition will do.) Bake at 300ºF for 1 1/2 hours or until set and relatively firm.

Potato Crust Quiche

Ingredients:
4 cups shredded dried potatoes
4 cups hot water
6 tbsp. dried onion
1 pound sausage, bacon, or diced ham
1/2 tsp. salt
1/2 tsp. pepper
8 eggs
1 cup milk
2 cups grated cheese

Directions for you:
Mix together the first three ingredients (potatoes, water, and onion) and let stand for 1/2 hour. Then spread in 10”x12” disposable aluminum pan. Brown meat (sausage, bacon, or ham), and sprinkle it over potato/onion mixture. Blend together eggs, milk, salt, and pepper and pour it over the meat
and potatoes stuff in the pan. Sprinkle casserole with cheese.

Baking Instructions:
(don’t do this part -- this is what the Food and Care Coalition will do.) Bake at 300ºF for 1 hour. Let stand 5-10 minutes before serving.

Christmas Morning Casserole
(serves 8)

Ingredients:
8 slices bread
1/4 cup butter, melted
1 cup cubed ham
2 cups grated sharp cheddar cheese
4 eggs, beaten
1 1/2 cups milk
1/4 tsp. salt
3/4 tsp. dry mustard

Directions for you:
Remove crusts from bread. Brush on melted butter. Cut up into cubes and spread into 10”x12” disposable aluminum pan. Sprinkle with cubed ham and grated cheese. Separately mix eggs, milk, salt and mustard and pour mixture over the casserole.

Baking Instructions:
(don’t do this part -- this is what the Food and Care Coalition will do.) Bake at 300ºF for 1 1/2 hours.



Sleeping Bags Needed

New sleeping bags and/or used (zippers working, clean, and rolled up) are needed to distribute to homeless clients of Food & Care Coalition. Cold weather sleeping bags are preferred. We will appreciate any number donated.

The holidays are around the corner and all of us at the Food and Care Coalition want to thank you for your generous support through the holidays of seasons past.

This year’s list of items for men and women are below. We need 150 of each item to put into our Client’s Christmas bags.
