Easy Thursday Recipe: Slow-Cooker Tex-Mex Chicken

Slow-Cooker Tex-Mex Chicken
serves 4


• 1 lb. boneless, skinless chicken breasts cut into 1" wide strips
• 2 T. taco seasoning mix (or your own taco seasoning)
• 2 T. flour
• 1 EACH green and red pepper, cut into strips
• 1 c. frozen corn
• 1 1/2 c. salsa (or like ingredients)
• 1 c. mexican-style shredded cheese

Toss chicken with taco seasoning and flour. Add to slow cooker. Add veggies and salsa. Stir.

Cook on low 6-8 hours (or High 3-4 hours)

Stir before serving and top with cheese.

EXTRA: serve over hot, cooked rice topped with sliced green onions and chopped cilantro or eat in tortillas.
